onnoendennis.jpgYesterday on the 9th of October we started with the Ciel Bleu Food Fair in Okura Tokyo. Everything went very well! I am always surprised about the fact that our Japanese colleagues learn everything so quickly, especially because we just started with the preparations two days ago and we practiced the dishes which we serve only once. Lunch and diner went really smooth so we can be very satisfied with the first day. Again, prospects are looking good for the weekend. Lunch and diner is going to be very busy, partly because all Japanese people have a long weekend off because of a National Holiday on the 13th of October. On this day they are celebrating that they have organized the Olympics 44 years ago in Tokyo.

Report from Tokyo Part II: Ready to cook!!

dennis_en_onno_in_japan.jpgYesterday evening we enjoyed the welcome diner in the Teppanyaki Restaurant Sazanka of Hotel Okura Tokyo, which is awarded with one Michelinstar. Some members of the management of Hotel Okura Tokyo joined us. Last night we finally had a good night sleep, so we had a fresh start today.

Report from Tokyo Part I: Like coming home…

Last Sunday evening the 5th of October it finally was time to leave for Japan. I said goodbye to my family, checked-inn our suitcases at Schiphol airport, ate my last Dutch meal and I was ready for a flight of 11 hours towards Tokyo.

Last week was a very special week with a lot of special happenings. On Monday the 29th of September, the yearly employee anniversary took place. During this anniversary Marc van der Tang (the Sous-chef), Dennis Huwaë (the junior Sous-chef), Arjan Speelman (Chef de Cuisine) and I received thankful words for our loyalty to hotel Okura for five years and all our achievements. Time passed by really fast.
