With the start of autumn we have introduced our new seasonal menu! The new menu is inspired by autumn. In this menu we will work with specialties like in the entrée we will have North Sea crab, soft-shell crab and lobster.
I have put a lot of creativity in it, especially for the refinement en taste of the product which really comes more alive.
Fall is also a season for wild products. From the Veluwe we have roe deer combined with pumpkin and another ingredient that fall is offering us, penny bun. Penny bun is a very tasty match with the roe deer because it is a full-bodied mushroom. We’re very excited to work with it because it’s the only season we can work with penny bun.
As a closure we serve a classic banana royale, typically prepared in Ciel Bleu style because you will get a banana polished in gold…
And because the summer went by so fast and we don’t want to forget it so quickly, we will close off one of our menus with a pizza Hawaii. Originally presented in a pizza box, peculiar would you think? I won’t spoil everything but a sneak preview: the crust is made of chocolate and chocolate-mousse, dressed with different types of chocolate, coconut and pineapple…
