Cooking in the special Christmas edition of the BZT Show |
Last Friday, December 19th, was all about fulfilling Christmas wishes of children. Children can send in their wishes which will be fulfilled during the Blood, Sweat and Tears show (NCRV-Dutch television channel).
During the show I cooked together with Pip and Tom. Pip wanted to learn how to make amuses and Tom wanted to prepare a dinner for the homeless.
Along with Sous Chef Marc van der Tang we prepared a real Christmas dinner. During the show people, who send their wishes in, were allowed to sit at a nice decorated table. At the end of the show 28 people sat at the table. The first amuse we served were cornetto’s with fillet of veal tartar and fresh truffle, and the second amuse was a crispy cannelloni of beetroot and gold leaf stuffed with lobster, avocado pear and green apple. For the main course we served confit duck leg and barly, foamy sauce of corn and baked mushrooms with a jus of morel. The dessert consisted of a coconut crumble with coconut mousse and marinated pineapple, crisps of coconut and pineapple.
Before we served the dessert, I had the honor to make Pip and Tom happy with the Ciel Bleu book so that they can practice at home. Pip wants to become a chef so she was very pleased with this gift. It was incredibly to cook with these enthusiastic kids. If the passion for this profession is there the skills can be learned!
