After retaining the Michelin stars in Okura’s restaurants Yamazato and Ciel Bleu, it is time for changes. That is why mid-February, a new menu will be presented in restaurant Ciel Bleu, because as I always say: If you want to retain two stars, you will need to strive for three stars!
To get inspiration for the new menu, we have visited German and French colleagues, where we have paid special attention to the details of presentation. Besides a new menu, the presentation of Ciel Bleu will also go through a lavish change, which will have its own signature. The restaurant team will carry out more actions at the guests’ table, which will increase the interaction and experiences of the guests.
Ciel Bleu is known for its complex kitchen, in which taste explosions occur, though appreciating the original values of the products. My new menu will also cause some unexpected taste experiences. You are the first to know: You can choose for the classic ‘Poire Belle Hélène, where all different tastes are combined in an original Ciel Bleu way. Or let me surprise you with 15 different taste perceptions of tomato and cucumber, in the new ‘Tomato and Cucumber 2010’! The picture shows you the first impression of some courses.
