Study-tour Limoux 2008
As mentioned in the previous weblog, Chef de Cuisine Arjan Speelman and Sommelier Noël Vanwittenbergh visited the annual prestigious wine auction in Limoux, located in the south east of France. During this period, a yearly traditional Religious festivity also takes place. This was a nice unexpected event for Speelman and Vanwittenbergh, who could witness the procession, especially organized for this traditional festivity. According to their culinary roots this traditional festivity could give inspiration to create new ideas for Ciel Bleu. Local specialties were served in several places throughout the picturesque village, of course combined with a nice glass of Limoux wine.

Towards the evening, invitees of the Netherlands and Belgium came together in the local religious community to have dinner and to get ready for the rest of the trip. Sunday morning after breakfast the invitees went to the cellars of Toques et Clochers. Today was the big day to try different samples of the wine barrels. Mr. van Lissum of The Wine & Food Association let the participants taste the wines from the pre-selected barrels. Invitees tasted, deliberated and selected. During the day the auction went better and better, motions varying from €3.000,- up to €7.700,- were noted. To make sure that we did not go home empty handed, we took five options and luckily were able to buy a barrel of Autan by Carrigues for a reasonable price. A very tasteful wine of an excellent quality has been selected for you!

During the gala dinner all invitees could relax and evaluate the day. The weekend was brought to an end by the culinary masterpieces from Mr. Arzac from the Basques. At midnight the disguised men and masked women finished the local carnival as well as the culinary event. At the end of the year, when the wine has been bottled, we would like to invite you to come to Ciel Bleu to drink a nice glass of this wine with us, naturally combined with a creative dish.
