Culinairy days in Maastricht |

From the 21st until the 23rd of January the annual European Fine Food Fair was held in Maastricht. This fair is the way to start the new year for every restaurateur with true passion for his work. The most exclusive and luxurious products are presented and the latest culinary trends are present. The annual fair serves also as a pleasant reunion of colleagues from the workfield, which results in a warm ambiance.
This year I was approached by Jan van As our fish importer to give a cooking demonstration at his stand on Monday the 21st of January. Monday was a special day for van As because their fifth edition of the books ‘Fish and Season' was launched. I totally support the initiative to create awareness concerning the environmental impacts of fishing in the wrong season. In these books it is explained which fishes can be used in which seasons.
After the presentation of the book my colleagues and I prepared one of my signature dishes the cannelloni with lobster in front of the visitors of the EFFF. Cooking equipment was arranged at the stand and we brought the necessary ingredients ourselves. It has been a wonderful experience to be able to permit the visitors a view in my kitchen this way and taste the dishes of Ciel Bleu. A wine selected by our sommelier Noel Vanwittenbergh accompanied the dishes. My wife Saskia Kokmeijer who also works in the field explained the combination between the wine and the dish because Noel attended an exclusive wine tasting in the wine theatre at that moment.

Next to Ciel Bleu there were many other restaurants and chefs that gave a presentation on the stand of van As like the young chefs of Fifteen and Rudolf van Veen. Also my colleagues Ronald Oud of Le Camelia Brasserie and Mr. Tomikawa of Yamazato performed a cooking demonstration. After all we have had several culinary days and it has been wonderful to also be close to your guests on the other side of the country.
